Ada (Ilayada)
Ingredients:
- Row white rice( Pachari )-500 gm
- Grated coconut-1/2 coconut
- Jaggery : 200gm
- Cardamon powder : 1/2 tsp
- Banana leafs : make medium sized rectangular shaped pieces
- Hot Water -approximately 1 cup
Instructions to prepare flour:
Either you can use ready made pathiri flour or prepare the flour very easily as follows:
Soak the the rice in water for 1 hour, then clean it properly using water(2 or 3 times). Wash out the rice, make it dry.
You can grind the rice from flour mill or you can prepare the flour using mixer from home itself.
In a mixer grind the rice, make it very nice( pathiri flour ), remove all water from flour by heat the same in low flame. In a pan add the flour and stir well for 6 to 7 minutes.
Boil water , Using this boiled water mix the rice powder( by adding required water) and Make a soft,non-sticky dough like pathiri maavu. Set aside.
Preparing filling:
Heat a steel vessel in stove, add 1/2 medium sized cup of water for 200gm of jaggery. Melt the jaggery and make a thick syrup. Filter the syrup for removing any unwanted particles. Once it cooled, add grated coconut and cardamom powder. Stir the mixture well.
Take a medium sized dough and place it into the banana leaf. press it using hand and make round shape. Then add 2 tbs of filling in the middle and spread it in the middle portion of the leaf. Fold the leaf. Make all the dough same like this.
In a cooker or idili pot, heat the water , put a steel plate above the water and place the adas into it. Steam it for 15 to 20 minutes. Then off the flame. After 5 minutes open the cooker and serve the traditional ada….
