Ariyunda
Ariyunda or Rice balls a traditional kerala snack.
Ingredients:
- Row white rice( Pachari ) : 2 cup
- Copra or coconut : 1 cup ( take small pieces from copra )
for balls:
- Jaggery- 4 to 5
- Cardamom : 2 to 3
Instructions to prepare putt flour:
In heavy bottom pan ( or uruli) add rice and roast it. Once rice turn its color to brown, off the flame and allow to cool.
Using a mixer make smooth rice powder.
From copra or dry coconut, or you can use coconut itself, take small pieces with a knife. Taking care your hands while doing this.
In a mixer crush the coconut pieces.
Preparation of Jaggery syrup:
In a vessel add jaggery and 1/4 glass water. Make thick syrup. Take care to prepare it without sticking on bottom.
Add cardamom powder into this while making syrup.
Preparing balls:
Into rice flour mix crushed coconut .
Then add jaggery syrup slowly and make a thick dough.
Then make lemon sized balls from it.
Once cooled serve the ariyunda or rice balls.
