Avalose podi
Avulose podi is an traditional kerala food for snacks. In malabar, it is called as “pooram varathathu”.
Ingredients:
- Row white rice( Pachari )-500 gm
- Grated coconut-2 coconut
- Salt – needed( 1 to 2 table spoon)
- Cumin seed: 1 tbs
- Sugar: as needed
Instructions to prepare putt flour:
Either you can use ready made putt flour or prepare the flour like putt flour as follows:
Soak the the rice in water for 1 hour, then clean it properly using water( 2 or 3 times). Wash out the rice, make it dry.
You can grind the rice from flour mill or you can prepare the flour using mixer from home itself.
In a mixer grind the rice, no need to make it too nice( medium sized grounded rice ),for 1 cup of rice 2 or 3 times blending enough.
Preparation of avulose podi:
In heavy bottom pan ( or uruli) add rice powder, grated coconut, 1 tbs cumin seeds, and 1/2 tbs salt. Mix it well using hand. Then keep it aside for minimum half hour.
Then place the pan in stove and stir it continuously. Stir until rice flour turns it color to light brown color. Stirring should be very careful, continuous stirring needed until turn color to brown( more than 30 minutes of stirring needed).
Then keep this mixture to cool and store in air tight bottle.
You can serve the avulose podi with sugar(as required). Avulose podi very is healthy, also can be keep it for 2 months( without adding sugar).
