Ghee Rice
Ingredients:
- Biriyani rice( kayama or kola) : 500gm
- Ghee: 100gm
- Salt: as needed
- Water: as needed
- Cardamom: 4 no.s
- Cloves( grambu):5- 6
- Cinnamon(Patta)- 3 small ieces
- Onion: 1 small sliced
- Coriander- chopped (for decoration)
- Cashew nuts, Raisin(Kismis) : Fry it in ghee for decoration.
Preparation:
Wash the rice properly 2 or 3 times.
For correct proportion, measure the rice using cup, take rice in cup( say one cup rice)
In a pressure cooker add add ghee, once boiled pour 1 1/2( one and half cup water for 2 cups rice) water into it, add 1 1/2 table spoon of salt.
If you not preferring pressure cooker( using heavy bottom vessel) use 2 cups water for 1 cup rice.
once boiled, add the washed rice into it. Add lightly crushed cardamon, cloves and cinnamon. Once bubbles came, close the cooker and putt cooker weight. Before came first full whistle properly( don’t allow for the whistle) off the stove. After 15 minutes open the cooker rice get ready.
For decoration in a pan add 1 table spoon of ghee, once get boiled add sliced onions and fry it. once get brown color add this mixture( onion and ghee) into the rice and mix it well. Add fried Cashews and Raisin.
Serve the ghee rice with chopped coriander leaves.
