Kesari
Ingredients:
- Semolina (Rava): 500gm
- Milk: 1 litter
- Sugar: 300gm
- Cardamom: 5 to 7 no.s ( make it into fine powder in a mixture)
- Cashew: 10 no.s
- Raisin : 6 to 10 no.s
- Ghee: 200gm
- Yellow color(orange color): 2 pinch ( you can avoid this for healthy food, or use saffron)
Preparation:
In a pan add 2 table spoon of ghee, once become hot add Semolina /Rava into it and stir continuously. Ensure all the part get fried. Dont allow to any color change just need to fry all portions. After 5 to 8 minutes off the flame and set aside the Rava in a news paper or plate.
In a cooker or deep vessel pour the milk. Once get hot add sugar and 1 or 2 pich of yellow color into it and stir well. Then add rava into it slowly and stir it continuously( to prevent lumps). Add cardamom powder into it.You can add 3/4 of cashews and raisins to the mixture, stir it well until rava cooked well and mixture become a thick paste. Add ghee in regular interval of mixing. Once rava absorbed all the milk and well cooked, mixture will leave from the side of pan slowly. Once mixture leave from the pan, replace it into a bowl. Using a spoon make the surface uniform texture. Then add remaining cashews and raisins. You can either use fried cashews and raisins or as raw.
Once get cool , tasty kesari is ready. No need to cool the kesari in refrigerator.
