Masala Dosa
Ingredients for dosa:
- Row rice (Pachari): 500gm
- Urad Dal (Uzhunnu paripp):150gm
- Salt:As needed
- Water: For grinding
- Ghee: for making dosa
Ingredients for Masala( for 5 masala dosa):
- Potatoes: 500gm
- onions : 250gm (chopped)
- green chilies: 3 or 4
- Ginger :1 tsp (Finely Chopped )
- Garlic :1 tsp (Finely Chopped )
- Coriander leaves: 3 or 4 stems
- curry leaves:3 or 4 stems
- Turmeric Powder: ½ tsp
- Garam masala Powder: ½ tsp
- Oil or ghee : As needed
- Salt : As needed
Preparing batter (Dosa maavu) :
Soak the rice and Dal separately for 2 to 3 hours. Wash and drain out the water from both.
Grind the rice and Dal separately using water. For 1 cup rice add approximately 1/4 to 1/2 cup water. we need a smooth and thick batter. Well grind the rice and Dal for smooth batter. After grinding mix two batters and stir well.
In the batter add 1 tbs(as needed) salt. Keep the batter for 7 hours minimum. Use a heavy bottom vessel to keep the mixture, quantity will be doubled after 7 hours.
Preparing Masala:
Boil the potatoes. once get cooked remove the skin and chop into small pieces.
Heat oil or ghee in a pan. Fry ginger, garlic, green chilies and curry leaves. Then add chopped onion. Saute the onions till it become translucent. Add the chopped potatoes, coriander leaves and stir it well. Then add turmeric powder, garam masala and salt.
Cook for 4 minutes. Add chopped coriander leaves. Stir and keep aside.
Preparing dosa:
In dosa pan( non stick pan) add some ghee, spread it all over the pan. Once get hot, pour 1 ladle of batter into the pan and spread it in round shape. Add some ghee above it.once one side get golden brown color turn it into other side and put the masala( 2 big spoon) into it and fold the dosa. If needed you can cook the other side of dosa.
Serve masala dosa with chuttney and sambar.
