Muttamaala and Mutta surkka
Muttamaala is a traditional malabar recipe. Prepared from Eggs, A sweet recipe, usually serve along with deserts in special occasions. Its simple and so tasty.
Ingredients:
- Egg : 10 nos
- Sugar : 150 gm
- Water: as needed
- Cardamom power: 2 pinch
- Milk power : 1 tbs
- A disposable glass
Preparation:
Separate the egg white and yolk(yellow). beat egg yolk in a bowl.
In a pan add sugar and water. Make sugar syrup with 1 cup of sugar and 1/2 cup water. Once it is boiled we can start to make “muttamaala”.
Adjust the flame intensity based on heat level. No need to make the sugar syrup in string consistency. Just need to boiled sugar syrup.
Make small holes at the bottom of disposable glass. Through holes egg yolk mixture should be pass easily.So make the size of holes based on it.
Pour the 2 ladle of egg mixture into the glass.
In the boiling sugar syrup pan pour the egg yolk through the holes in uniform and circular motion.Within 2 to 3 minutes egg yolk will be cooked.
Once it is cooked and form a string shape, sprinkle little amount of water on this pan( to get smooth strings of egg) and take out the “mutta mala” as strings from pan into a plate.
Do the same for remaining with egg yolks.
Tasty and special “muttamaala” ready to serve.
What to do with the remaining egg white and sugar syrup? We can make “Mutta surka” with this .
Beat the egg white.
Mix the egg white and cooled sugar syrup(remaining sugar syrup from muttamaala) well. If you need more sweet add more sugar into this. You can 1 tbs of milk powder to this mixture to get white color for the “mutta surka”.
Add cardamom powder into this and mix well.
Pour the mixture into a steel bowl.
Steam this mixture in boiling water for 4 to 6 minutes. Then off the flame and allow the cake to cool. Then remove cake from the bowl and make square pieces.
Serve it with “mutta maala”…
