Poricha pathiri
Poricha pathiri or ney (nei) pathiri is a type of pathiri which is more thicker than usually pathiris and deep frying in oil.
Ingredients:
- Row white rice( Pachari )-2 cups
- Black sesame seeds-1/4 tbs
- Cumin seeds : 1 tbs
- Grated coconut :1/4 coconut
- shallots: 6 nos
- Salt: 3/4 tbs
- Hot Water -approximately 3 cup
Instructions to prepare flour:
Crush grated coconut, cumin seeds, and shallots together.
Either you can use ready made pathiri flour or prepare the flour very easily as follows:
Soak the the rice in water for 1 hour, then clean it properly using water(2 or 3 times). Wash out the rice, make it dry.
You can make flour with rice from flour mill or you can prepare the flour using mixer from home itself.
In a mixer grind the rice, make it very nice( pathiri flour ), remove all water from flour by heat the same in low flame. In a pan roast the flour and stir well for 6 to 7 minutes. No need to change the color of flour. just need to remove the water completely.
Boil water in vessel , add 3/4 tbs salt . Then add rice powder slowly and mix with a ladle. Then off the flame and allow to cool. Once it is cooled make a soft,non-sticky dough like “pathiri ” dough . while mixing add crushed coconut, black sesame seeds and mix all together well with hand. Make a smooth dough and Set aside.
Preparing pathiri:
Take half portion of dough and roll out with little bit more thickness, then cut the pathiris using lid of any circular shaped bottle or vessel or with a glass.
Deep fry the pathiris in coconut oil. Once it start its color to little brown remove from oil.
Then serve it into a plate.
