Salted kozhukatta
Ammini kozhukkatta or simply kozhukatta is an easy and delicious recipe. Preparing for breakfast and also used as a evening snack.
Ingredients:
- Row white rice( Pachari )-250 gm
- Salt:1/2 tbs
- Hot Water -approximately 1 cup
- Mustard seeds : 1tbs
- Shallots : 10 to 15 nos (crush it in mixer or used chopped shallots)
- Curry leaves : 2 stems
- Red chills : 3 to 4 nos
- Coconut oil : 2 tbs
Instructions to prepare flour:
Either you can use ready made pathiri flour or prepare the flour very easily as follows:
Soak the the rice in water for 1 hour, then clean it properly using water(2 or 3 times). Wash out the rice, make it dry.
You can make flour with rice from flour mill or you can prepare the flour using mixer from home itself.
In a mixer grind the rice, make it very nice( pathiri flour ), remove all water from flour by heat the same in low flame. In a pan roast the flour and stir well for 6 to 7 minutes. No need to change the color of flour. just need to remove the water completely.
Boil water , Using this boiled water mix the rice powder( by adding required water) with salt,and Make a soft,non-sticky dough like “pathiri ” dough . Set aside.
Preparing kozhukatta:
Take a orange sized dough balls.Make a oval shape with hand. Press in center along the length with 4 fingers. As in below pic:
Cook the kozhukatta in idli cooker. In a cooker or idili pot, heat the water , put a steel plate above the water and place the kozhukatte into it. Steam it for 20 minutes. Then off the flame. After 5 minutes open the cooker .
Once it is cooled cut kozhukatta into small pieces.
In a pan add 2 table spoon of oil, once hot splutter 1 tbs of mustard, 3 to 4 red chilies, crushed shallots, and 2 stems of curry leaves fry it well and add kozhukatta pieces into it. Mix all together well.
Then off the flame and serve hot.
