Samosa
Samosa, is well known indian snack, and known as samosa itself in all sides if india.
In malabar sides of kerala, samosa making is not about taste itself, its an art. They are making small and beautiful samosas with chicken, and beef.
Also you can make samosas with vegetables. Instead of meat, you can use potatoes, green pieces, and beetroots (any of these or with all).
For 35 to 40 small samosas:
Ingredients:
- chicken or beef: 250gm
- onions : 3 nos ( Finely Chopped )
- green chilies: 4 or 5 ( Finely Chopped )
- Ginger paste :2 tsp
- Garlic paste :2 tsp
- Turmeric Powder: ½ tsp
- Red chili powder: 1/2 tbs
- Garam masala Powder: ½ tsp
- Wheat flour : 1 and 1/2 cup
- Maida :1 and 1/2 cup
- Oil or ghee : As needed for frying.
- Salt : As needed
Preparation :
Preparing “samosa wrappers”:
In a bowl add the flour/atta, maida, 3 tbs oil & salt.Mix it well using water (sprinkle water in small quantity). Make a soft,non-sticky dough. Keep it aside for minimum 30 minutes.
Then make small ,or lemon sized balls using dough.
Take each dough ball, roll out the ball into round shape , a small plate size.
Either you can cut this prepared rolled out dough into 2 or 4 pieces through centers. When cutting into 4 pieces you can make small sized samosas.
Fold 2 corners into each other and press using little amount of water in fingers. Press bottom section and make a point here. So it will look like a small cover. We need to fill the chicken here , then we will fold the third corner into bottom side.
Here we completed the preparation of “wrappers”.
Preparing Filling:
Boil the chicken with 1/2 tbs of salt and cook well. Remove the bones and take the flush. In a mixer crush the chicken and keep aside.
Heat oil in a pan. Fry ginger, garlic, and green chilies paste. Then add chopped onion. Saute the onions until it become translucent. Add crushed chicken and stir it well. Then add turmeric powder, red chili powder garam masala and 1/2 to 3/4 tbs salt. Saute it well until all ingredients mix together. Then off the flame.
stuffing:
In prepared samosa wrappers fill the masala based on the wrapper size. Then fold the third corner into the other side.
Also you can press this side with the opposite one to fix the shape.
In a pan Heat oil for deep fry. Then deep fry the samosas in oil.
Malabar special small samosa ready to serve.
While you making vegetable samosas cook vegetables and mix with the masala.
