sharkara varatti
For 250 gm sharkara varatti:
Ingredients:
- Row Banana:500 gm
- Jaggery:250gm
- Rice flour : 3 tbs
- Dried ginger powder : 10gm ( roast it before using) ( chukk in malayalam)
- salt : as needed
- Water: For grinding
- sesame powder:5 gm( 1 to 2 tbs)( roast it before using)
- Cardamom :6 nos (make it powder )
- Oil : 1/2 litter (for deep fry)
Preparation:
Peel off the bananas , for this using a knife slice the skin vertically.
Once remove the skin set aside the bananas in water.
After 10 minutes, cut the bananas vertically 2 pieces. Then cut into small pieces ( need to make thick pieces).
Wash out these banana pieces 4 or 5 times in water properly. Need to remove its stain completely.
In a pan pour the oil and heat it. once get heat drop these banana pieces into it. stir it continuously using a spoon or ladle until it starts to turn crispy.
In glass make salt water using salt and water( half of glass) . Pour 3 tbs of this mixture into the pan in each 10 minutes interval.
Stir it continuously. Once it turn crispy, take a piece of banana and break it using hand, if it easily breakable its properly fried.
Then remove from oil and keep it aside for cool.
In a vessel add jaggery and 1 cup of water. make a thick syrup of it. Once you take the syrup in the finger it needs to be like honey( Thread consistency).
Once it is ready, add prepared banana chips into it and mix it well. Add Dried ginger powder, sesame powder, Cardamom powder it it.
Mix it well. As last step add 2 tbs of rice flour. Off the flame and remove it from stove.
Keep sharkara vartti aside to cool.it will become more crispy once it is cooled.
