Vattayappam
Ingredients:
- Raw rice(Pachari) : 500 gm
- Cooked rice : 1 glass
- Grated coconut : 1 coconut
- Sugar : 1/2 cup
- yeast : 1/2 tbs
- salt : 1/2 tbs
- Cashews/Raisins – As needed
- Ghee :
Preparation:
Soak the rice for 2 hours. Wash and drain out the water from it.
In a bowl soak the yeast in water.
Grind(using a mixer) the rice well using 1 cup(required amount to get a not so much thick batter) of water.
Add grated Coconut , cooked rice soaked yeast and 5 to 6 tbs sugar into the mixer, and grind all together well.
Set aside the batter for overnight.
On next day add 1/2 tbs slat and 2 to 3 tbs of sugar into the batter and mix it well.
Then need to steam the appam in a idli cooker or a hard bottom vessel. Place water on the bottom side and place a plate on it. Then pour 2 tbs of ghee (greasing) .
Add cashews and raisins into the plate.
Pour prepared batter into the plate.
Cook for 15 minutes. Then off the flame
Once it is cooled remove from the plate and serve into a plate as bottom side up. So raisins and cashews can be seen on the top of vattayappam.
Sweet and tasty xmas special vattayappam ready to serve.
You can use banana instead or together with cashews and raisins. So place the banana pieces on before pouring batter into the pan.
